snail's drooling

Snail's
drooling consists in eliminating the maximum of drool before cooking
them. That will avoid having more or less
greenish
trails in the frying pan!
Material
necessary:
- Water
- Salt
- Vinegar
- A
bucket
- Snails
- A sieve (not
obligatory)
- A brain (it's better!)

To make them drool, put snails in a bucket out of plastic. Start
by humidifying them so that they "put out their horns". Put a
spoon of salt soup and a spoon with vinegar soup (for 50 snails). Stir
up and wait a few minutes.
Normally, you should
see them foaming abundantly:
After ten minutes, transfer snails on a sieve to rinse them with a
water jet. |  |

Caution!!! After the rinsing, all the foam remains bound under
the sieve. Therefore, if you don't want to hear your wife
screaming, avoid doing that on the terrace... |
Start
again operation 3 or 4 times.
